My company is getting a M&R Diamonback used....we have 2 of the smaller manual dryers, but now need to upgrade. What would be the ideal size dryer needed?

Bigger the better, especially if you plan on doing any waterbased printing.
I'd say minimum of 36" belt and 8ft of heat for plastisol though. I think the
Diamondbacks max out at 480/hr or so?

48 inch M&R Mini Sprint would be perfect with 8 or 10 feet of heat provided you will not aquire another press?
