I have done stitching on leather products but not on jackets and I have been getting inquiries from some motorcyclist about doing some work for them. So far their entire jacket has lining but they do not want the stitching to go through the lining. How hard is it to move the lining for the area that I would be working on? Mainly on the back of the jackets.

Removing the lining from where the lining and leather stitchup would not be a good idea. Reason being that the leather could easily be damaged. Most Leather jackets are quite expensive, thats why i would suggest you cut up the lining in the center (just behind where the embroidery will be done). Frame the jacket holding the cutted lining apart. Do the embroidery and then stitch up the lining using same colour thread. Best would be to stitch it up by hand.
I would ask you to sit with your client and give him such ideas so that he can decide whats best for him.
