software will probably be more a personal choice but some of the names that i would suggest looking at would be:
Wilcom
Pulse
Melco's (don't remember the name)
some people i know like Embird
as for training, each software company usually has some level of training. how much is up to each company. A video that might be worth looking at to get an idea is one produced by John Deere: http://www.adorableideas.com/store/index.php?cPath=46_477
just some thoughts...
Have a great day! :)

Re: Want to learn digitizing
In addition to training, some people like Thomas Moore's book http://srvr03.ud.net/strawberrystitch/shop/Books/dig101.html . Moore also has online classes http://www.strawberrystitch.com/edsol/edsonline.php . If you can attend an ISS show http://www.issshows.com/ there should be some digitizing classes.
